Our ingredients are as follows:


1.5 kg beef (shoulder or brisket), cut into medium-sized pieces
5-6 Tsakoniki eggplants (cut into large pieces and soaked in water for about half an hour)
2 onions, sliced
3 cloves of garlic
1/2 wine glass of red wine
2 tablespoons of tomato paste
1 ripe tomato,
grated Some olive oil Salt,
pepper, cinnamon, bay leaf, and other spices

Directions

In a deep pot, saute the eggplants until they take on color. Once they are cooked, remove them from the pot and place them on a plate nearby. Take the beef and brown it well on all sides. Add the eggplants, onions, and quickly stir them together. Add the garlic and tomato paste, stir well, and deglaze with the wine. Add the grated tomato and the spices. Reduce the heat, cover, and let it simmer for about an hour.
