This is a delicious dish full of vibrant colors and flavors from the vegetables, combined with tender and flavorful beef that will pleasantly surprise you. It is a dish loved by everyone and is perfect for both a Sunday lunch or a festive dinner.
Ingredients:
• 1 kg of beef, cut into pieces
• 2 onions, sliced
• 2 carrots, sliced
• 2 zucchinis, roughly chopped
• 2 celery stalks (remove the fibers), sliced
• 3 potatoes, diced
• 3 garlic cloves, finely chopped
• Juice of 2 juicy lemons
• 2 tbsp corn flour
• Olive oil
• Salt and pepper
• 2 bay leaves
Instructions:
1. In a pot, heat some olive oil and brown the beef on all sides.
2. Add the onions, celery, garlic, and saute for 3 more minutes. Then add enough water to cover the beef. Cover the pot and let it simmer for 45 minutes.
3. Add the rest of the vegetables, bay leaves, salt, and pepper. Cover the pot and let it simmer for another 45 minutes. Be careful not to let the water evaporate.
4. Occasionally stir the pot by holding the handles and turning it with gentle movements.
5. In a small bowl, mix the corn flour with some broth from the pot, and stir until dissolved. Pour the mixture into the pot and let it cook for 1-2 more boils to thicken the sauce.
6. Serve hot and enjoy!
Note:
• The cooking time of the beef depends on the size of the pieces.
• To ensure even cooking of the vegetables, cut them according to their hardness. For example, slice the carrots to 1 cm thick while cutting the zucchinis into 3-4 cm pieces.
