Here are our ingredients:
• 1 ½ kilograms of beef (brisket or chuck), cut into pieces
• 1 finely chopped onion
• 8 dried plums (apricots), pitted
• 2 bay leaves
• 1 cinnamon stick
• 1 can of tomato puree
• 130 grams of red wine + enough wine to soak the plums
• 80 grams of olive oil
• Salt and pepper
First, we soak the plums in the wine.
Heat the olive oil in a saucepan. Saute the beef pieces well on all sides. Add the onion and saute for 2 minutes. Then, deglaze the pan with the wine. Allow a minute for the alcohol to evaporate, and then add the tomato puree, cinnamon stick, and enough water to partially cover the beef. Cover with a lid, lower the heat, and simmer for about 1 hour and 15 minutes.
Next, remove the cinnamon stick and bay leaves, and add the plums. Season with salt and pepper. (You may need to add a little water to the dish.) Let it simmer for another half an hour approximately. Just before the end, taste and adjust the seasoning.
Serve with mashed potatoes, mashed pumpkin, or rice.
