Lemon-flavored Veal Tongue

A dish that has either passionate fans or skeptical ones. It remains a very tender and lean meat, tender and delicious. Today, we will accompany it with perfectly matching rice.


Our Ingredients:
1 veal tongue
1 finely chopped onion and 1 whole onion
1 carrot
1 finely chopped leek
2 cloves of garlic, finely chopped
Juice of one juicy lemon
? bunch of finely chopped dill
2 tbsp butter
Salt and pepper

Directions

Thoroughly wash the veal tongue. In a pot, boil the tongue (together with the whole onion cut into large pieces and the carrot) for about an hour until it becomes tender. Then, let it cool down and peel off the skin.
Slice the tongue into thin strips.
While waiting for the tongue to boil, in a separate saucepan, melt the butter and lightly saute the leek and onion until softened. Add the garlic and a little water, and let it simmer for a few minutes. Then, add the tongue fillets, lemon juice, salt, and pepper. Allow it to simmer until most of the liquid evaporates. Finally, add the dill and let it simmer for a few more minutes.
While waiting for the tongue sauce to simmer, strain the broth from the pot, discarding the onion and carrot, and cook our rice.
Serve the rice and place the tongue fillets on top.
