A super easy recipe that you must try. It's light, healthy, and if you remove the skin, it becomes super diet-friendly. It's so easy that you and your family will be making it constantly and experimenting with different vegetables and flavors. Serve each packet on individual plates and let them open it up to release the aromas and flavors!


Ingredients:
6 chicken breasts, cut into large chunks
1 onion, roughly chopped
2 cloves of garlic, sliced
2 carrots, sliced
2 zucchinis, thickly sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
2 large potatoes, cut into large chunks
3-4 portobello mushrooms, sliced
1/4 cup white wine
1 tbsp fresh oregano
1/2 cup olive oil
1 tbsp mustard
1 tbsp lemon juice
Salt and pepper
Parchment paper
Kitchen twine

Directions

In a large bowl, mix all the ingredients together to marinate well. Cover the bowl and refrigerate for 1-2 hours.
Cut the parchment paper into 6 large pieces.
Divide the marinated ingredients into 6 equal portions and place each portion onto a parchment paper. Fold the paper and secure it with kitchen twine to create a packet or pouch shape.
Place the packets on a baking tray and bake in the oven for about 1 1/2 hours at 180°C (350°F).
• A wonderful variation is to include Naxos or San Michali Syros cheese inside the vegetable pieces for extra deliciousness.
