Ingredients:
• 600g chicken fillet, cut into large pieces
• 1 large onion, finely chopped
• 4 fresh spring onions, finely chopped
• 2 cloves of garlic, finely chopped
• 2 medium-sized potatoes, diced
• 2 carrots, sliced
• 1 kg fresh or frozen peas, peeled
• ½ bunch of dill, finely chopped
• 3-4 ripe tomatoes, crushed or 1 can of tomato concasse (400g)
• 1 tsp tomato paste
• Salt, pepper, 1 bay leaf
• ? tsp sugar
• Olive oil
1. In a pot, heat the olive oil and add the chicken fillet, which you've dried with paper towels and seasoned with salt and pepper. Sear the chicken on all sides until it gets a nice color.
2. Then add both the dry and fresh onions, the tomato paste, followed by the garlic and then the potatoes with the carrots. Stir to saute everything together, and add the peas.
3. Add the tomatoes and a little water (about 2 cups), salt, pepper, bay leaf, and let it simmer for 40 minutes. Afterward, add the dill and simmer for an additional 10 minutes. Taste and adjust seasonings if necessary.
4. Serve with a slice of bread!
? You can omit the tomato paste if you prefer.
