But beyond its amazing taste, the chicken roll brings to mind the image of a beloved mother cooking with love and care. The aroma of the dish blends with memories of Sunday meals at home, where families gathered around a table full of joy and happiness.
The chicken roll is proof that simplicity can be dazzling. The traditional recipe meets creativity and gives us a culinary experience that we won't easily forget.
And the best part is that the chicken roll is friendly to our wallets. With budget-friendly ingredients and straightforward preparation, we can create a meal that impresses our guests without spending a fortune.
Ingredients:
• 1 ½ kilograms of mixed ground chicken (thighs and breasts)
• 2 dry onions, finely chopped
• 2 cloves of minced garlic
• 300 grams of breadcrumbs
• 3 eggs
• 3 tablespoons of fresh thyme
• 1 teaspoon of oregano
• 2 tablespoons of mustard
• 4-5 carrots
• 50 grams of olive oil
• 3 vegetable bouillon cubes
• 1 green bell pepper, cut into thick strips
• 1 red Florina pepper, cut into thick strips
1. In a pan, saute the chopped onion until it changes color and becomes golden brown. Set it aside to cool.
2. In a bowl, mix the ground chicken, vegetable bouillon cubes, breadcrumbs, eggs, minced garlic, and the cooled sauteed onion. Add thyme, oregano, and mustard. Mix everything thoroughly.
3. Spread 2 sheets of aluminum foil on the countertop and place plastic wrap on top. Spread the chicken mixture on the plastic wrap. Place 3 carrots lengthwise in the middle, along with the bell pepper strips and Florina pepper strips.
4. Using the plastic wrap, roll the chicken mixture tightly to form a log shape. Seal the edges tightly to create a caramel shape. Place the roll in the refrigerator for 2-3 hours.
5. Preheat the oven. In a baking dish, place the remaining carrots cut into large pieces. Place the chicken roll on top of the carrots and add a little water, olive oil, one vegetable bouillon cube, some thyme, and salt and pepper to taste. Place the baking dish in the oven and bake for approximately 1 ½ to 2 hours at 170-180 degrees Celsius.
6. Remove the baking dish from the oven and carefully remove the wrapping. Let it cool for 10 minutes. Meanwhile, take the liquid from the baking dish along with the carrots and blend them in a blender. Pour the liquid into a saucepan and let it boil for 5-8 minutes. If desired, thicken the sauce with a little corn flour. Taste and adjust the seasoning if needed.
7. Serve the chicken roll with roasted potatoes, mashed potatoes, or rice. Enjoy!
Note:
• Sauteing the onion lightly helps remove excess moisture and adds sweetness.
• You can add additional ingredients to the filling, such as slices of hard cheese (regato), eggs, mushrooms, or even deli meats if desired.
• Personally, I remove the wrapping 10 minutes before taking the roll out of the oven and let it bake for an additional 10 minutes to create a light crust on top.
• If you like, you can add finely chopped parsley or dill as a garnish.
