Ingredients:
2 boneless chicken breasts, cubed
½ cauliflower, grated
1 clove of garlic, minced
1 carrot, diced
1 zucchini, diced
1 small onion, diced
2 fresh green onions, thinly sliced
½ green bell pepper, diced
½ red bell pepper, diced
½ portobello mushroom, diced
½ stalk of celery, finely chopped
Vegetable broth
Salt and pepper
Olive oil
Fresh parsley, finely chopped
Instructions: In a large skillet, saute the chicken with a little olive oil. Once browned, add the onions, garlic, peppers, carrot, celery, zucchini, and mushroom. Stir in the grated cauliflower, add vegetable broth to cover the ingredients, taste and adjust the seasoning, and reduce the heat. Simmer for 3-4 minutes.
Serve hot, garnished with fresh parsley.
• You can add any other vegetables you like. • Personally, I recommend adding truffle, as it complements the vegetables and adds a unique aroma to the dish.
