Ingredients:
1 whole chicken, cut into pieces
1/2 kg potatoes, peeled and cut into large chunks
2 dry onions, finely chopped
3 cloves of garlic, finely chopped
50g butter
500g vegetable or chicken broth
2 carrots, sliced
2 tbsp mustard
Juice of one juicy lemon
Salt, pepper, oregano,
2 bay leaves
Olive oil
Finely chopped parsley
Prepare all the ingredients and have them ready by your side. In a pot, heat olive oil and saute the chicken pieces from all sides. Then add the onions, garlic, potatoes, and carrots. Once all the ingredients are sauteed, pour in the broth, mustard, salt, pepper, bay leaves, and oregano. Cover the pot, lower the heat, and simmer for about 30 minutes. Do not stir the dish, just shake the pot by its handles. Then add the butter and lemon juice. Let it simmer for 2-3 more boils and just before turning off the heat, sprinkle with parsley.
If you have chicken portions, saute the chicken first, then add the onions, garlic, and broth. Simmer for about 40 minutes, and then add the remaining ingredients. Simmer for another 20 minutes until the potatoes are tender and cooked through.
