Ingredients:
2 chicken breasts, skinless, cut into large pieces
10 white mushrooms, quartered
1 onion, finely chopped
1 leek, finely chopped
5 sun-dried tomatoes, finely chopped
1/2 red bell pepper, finely chopped
1/2 green bell pepper, finely chopped
200g chicken broth
150g yogurt
150g crumbled feta cheese
 Olive oil
Salt and pepper
Finely chopped parsley

Directions



In a large skillet, heat some olive oil and brown the chicken pieces on all sides until they develop a golden color. Then, remove them from the skillet and place them on a plate, covering them to keep them warm.
Using the same skillet, saute the onion, leek, peppers, and sun-dried tomatoes. Add the mushrooms and saute lightly over medium heat. Next, add the chicken pieces back to the skillet. Pour in the chicken broth, season with salt and pepper, cover the skillet, and let it simmer. Once the liquids have almost evaporated, remove the skillet from the heat and stir in the yogurt. Mix well until combined.
Sprinkle the crumbled feta cheese over the dish and garnish with finely chopped parsley and freshly ground pepper.
