A dish that screams summer, light, and versatile, perfect to serve as an appetizer or a salad in a bowl with finely chopped peppers and chicken. Or enjoy it warm as a light meal. However you choose to have it, I'm sure you'll love it and make it a part of your dietary routine.
Our Ingredients
2 grilled red bell peppers
2 grilled green bell peppers
2 grilled yellow bell peppers
1 grilled eggplant
2 grilled chicken fillets, cooked or boiled
For the Feta Mousse
200g hard feta cheese
50g Greek yogurt
50g olive oil
Lime zest
Oregano, pepper, thyme
We grill the peppers, eggplant, and chicken. Peel and quarter the peppers. Slice the chicken fillets into diagonal pieces.
Crush the feta cheese and blend it in a blender with the rest of the ingredients. You can even add some cumin or mint if you prefer.
Serve on a platter, or cut the grilled peppers, eggplant, and chicken into thin strips, drizzle with the feta mousse, and serve in a salad bowl with plenty of finely chopped parsley on top.
