Lemony Chicken in a Pot with Rice

A classic, everyday dish that is easily prepared, with a wonderful creamy lemon sauce that will leave you wanting more! We'll make it with delicious, flavorful rice that will impress our loved ones and earn us flattering comments!


Our Ingredients:
•    1 chicken, cut into pieces (ask your butcher to do it for you)
•    80g olive oil
•    1 finely chopped onion
•    2 whole garlic cloves
•    Juice from one juicy lemon
•    Vegetable broth
•    2 tablespoons corn flour
•    Salt and pepper
For the Rice:
•    2 cups yellow rice
•    3 tablespoons olive oil
•    1 finely chopped onion
•    2 finely chopped mushrooms
•    1 finely chopped carrot
•    2-3 tablespoons finely chopped sundried tomatoes
•    A handful of finely chopped green and red bell peppers
•    Salt and pepper

Directions


Take a deep pot, add the olive oil, and after patting dry the chicken with a paper towel, saute it on all sides until it gains color. Then, add the onion, garlic, lemon, and vegetable broth until the chicken is almost covered. Add salt and pepper, close the lid, and simmer the chicken for 40 minutes (depending on the size of the pieces).
Once the chicken is cooked, transfer it to a platter and strain the broth. Keep 2 cups of broth aside. Mix the remaining broth with the corn flour to make the sauce.
In another pot, heat the olive oil, add the finely chopped vegetables, and saute them for 2-3 minutes. Then, add the rice and lightly saute everything together. Add the 2 cups of reserved broth and 3 more cups of water. Season with salt and pepper and simmer with a semi-covered lid. Once small holes appear on the surface of the rice, remove the pot from the heat and cover it with a clean towel.
Serve the lemony chicken on a bed of rice and enjoy!
