Our Ingredients:
1 chicken, cut into pieces
2 zucchinis, sliced
2 eggplants, sliced
2 carrots, sliced
2 portobello mushrooms, sliced
2 tomatoes, diced
1 onion, sliced
3 cloves of garlic, sliced
Olive oil
Salt, pepper, oregano, thyme
Chicken broth or water
In a bowl, we cut the eggplant and soak it in water with a pinch of salt to remove any bitterness. While we wait for it to soak, we prepare the rest of our vegetables. Once the eggplants have soaked, we drain and gently pat them dry with paper towels.
Preheat the oven to 180-200 degrees Celsius.
In a large skillet, heat some olive oil and saute the eggplants until golden brown on all sides. Transfer them to a plate. In the same skillet, saute the chicken pieces and then all the vegetables.
Next, take a baking dish or roasting pan and layer the vegetables, followed by the chicken. Season with salt, pepper, and herbs, then mix everything together. Pour in a little chicken broth to keep the vegetables moist. Place the dish on the middle rack of the oven and let it roast until the chicken and vegetables are nicely browned.
Serve hot, accompanied by a slice of bread and a glass of wine.
