Ingredients:

700g chicken, cut into cubes
1 large onion, finely chopped
2 large potatoes, diced
2 large carrots, diced
1/2 celery root, cubed
1 liter chicken broth
2 tbsp butter
50g heavy cream
2 tbsp flour
1 cup milk
Salt and pepper, to taste

Directions

1In a pot, melt the butter over medium heat. Add the chicken and onion, and saute until they soften and turn golden.
Add the potatoes, carrots, and celery root, and stir well. Continue cooking for another 2-3 minutes.
Add the flour and mix well until it is incorporated with the ingredients. Stir for another minute.
Gradually add the heavy cream and chicken broth, stirring constantly, until a smooth and creamy sauce is formed.
Allow the soup to simmer on medium heat for about 15-20 minutes, until the vegetables and chicken are tender.
Remove the pot from the heat and let the soup cool slightly.
Using a blender or immersion blender, blend the soup until it becomes smooth and creamy in texture.
Return the soup to the pot and heat it over medium heat for a few minutes, stirring occasionally.
