Goat Stew with Pasta

An easy and flavorful recipe, perfect for a comforting meal with a glass of wine. The pasta will cook in the flavorful meat broth, creating a delicious and satisfying dish. You can also substitute the pasta with potatoes, or any other accompaniment of your choice.

Ingredients:

2 kilograms of goat meat, cut into pieces (preferably shank or leg)

2 dried onions, finely chopped

2 cloves of garlic, finely chopped

½ kilogram of ripe tomatoes, grated or 1 can of crushed tomatoes

½ wine glass of red wine

2 tablespoons of tomato paste

1 packet of pasta

Salt, pepper,

4-5 whole allspice berries,

2 bay leaves

Olive oil

A pinch of sugar

A little fresh butter

Myzithra cheese

Directions

In a large pot, heat some olive oil and saute the pieces of goat meat. Brown the meat on all sides to enhance its color and flavor. Next, add the tomato paste to the bottom of the pot, followed by the onions and garlic. Pour in the red wine and let the alcohol evaporate. Reduce the heat and allow the meat to simmer in its own juices.

Once the liquids have reduced, add the tomatoes along with 2 cups of hot water, a pinch of sugar, allspice berries, bay leaves, salt, and pepper. Cover the pot and let it simmer for about 1-1 ½ hours.

After the meat has become tender, remove half of the meat and half of the sauce from the pot. Add warm water to the pot, enough to create approximately 1.5 kilograms of liquid. Bring it to a boil and add the pasta.

Just before the dish is fully cooked, melt some butter and pour it over the pasta.

Serve the stew with a generous sprinkling of grated myzithra cheese.
