Lamb in Parchment

A delicious lamb dish with tender potatoes and kefalotyri cheese. An easy recipe that combines the flavors of lamb and the aromas of herbs to delight the palate and evoke memories of old family recipes. The preparation is quick, simple, and most importantly...effortless!

Ingredients:

  • 1 leg of lamb, approximately 2 kg
  • 4-5 cloves of garlic, cut in half lengthwise
  • 1 kg baby potatoes or large potatoes, cut into large pieces
  • 60 g olive oil
  • Juice and zest of 1 juicy lemon
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp rosemary
  • 300 g kefalotyri cheese, cut into large pieces
  • Salt and pepper
  • 3 large pieces of parchment paper

Directions

  1. Ask your butcher to break the lamb leg into 2-3 pieces.
  2. Rinse the lamb thoroughly with water to remove any small bone fragments from the cutting process.
  3. Pat the lamb dry to remove any excess moisture.
  4. Place the parchment paper pieces in a crisscross pattern in a baking dish and arrange the potatoes on top. Season the potatoes with salt and pepper. Mix the potatoes to distribute them evenly.
  5. Place the lamb leg on top, making sure the garlic cloves are inserted everywhere. If needed, make small incisions with a knife to insert the garlic.
