Our Ingredients:
• 1 ½ kg pork shoulder, cut into pieces (bites)
• ½ kg small pasta squares (hilopites)
• 2 dried onions, finely chopped
• 2 cloves of garlic, finely chopped
• 2 tbsp tomato paste
• 2 ripe tomatoes, peeled and minced
• A pinch of sugar
• 1 red bell pepper, sliced into rings
• 50 g black raisins
• Juice from a juicy orange
• Orange zest
• Salt and pepper
• ½ cup red wine
• ½ cup olive oil

Directions

In a wide pot, heat olive oil and saute the pork until it gains color. Remove it from the pot and place it on a plate lined with absorbent paper.
In the same pot, saute the onion, bell pepper, and garlic. Add the pork, tomato paste, and mix to homogenize the ingredients. Deglaze with wine, add the minced tomato and a pinch of sugar, then cover with a lid. Allow it to simmer for about 1 hour and 15 minutes (depending on the size of the pork pieces). While waiting for the pork to boil, cook the hilopites and place them on a plate.
Around the one-hour mark, add the raisins (we prefer black raisins for a less sweet flavor). Shortly before removing it from the heat, add the orange zest and juice, season with salt and pepper, and allow it to simmer briefly. Serve it warm, with hilopites, mashed potatoes, or any accompaniment of your choice.
