Braised Pork Shank with Beer

Ingredients:

3-4 pork shanks (approximately 2 kilograms in total)

3-4 cloves of finely chopped garlic

2 large leeks, roughly chopped

2 large onions, roughly chopped

500 grams of SEPTEM beer or any other dark beer

2 tablespoons of mustard

Olive oil,

salt, and pepper

2 tablespoons of honey

2 bay leaves

1 teaspoon of rosemary

Directions

Take each pork shank and pierce it in different spots. Insert the finely chopped garlic cloves into the holes. Next, mix the mustard with honey and the herbs. Coat the pork shanks thoroughly with the mixture, and then place them in a container and bathe them with the beer.

Let them marinate overnight.

Then, transfer the pork shanks with their liquids into a casserole dish and braise them slowly for 3-3 ½ hours at 170 degrees Celsius. Afterwards, open the casserole dish and continue cooking until the shanks acquire a caramelized color.

Once the pork shanks are ready, remove them from the dish and collect the liquids from the casserole. Strain the liquids to remove any solid pieces, and transfer the sauce to a small saucepan. Thicken the sauce with a bit of cornstarch.

Serve the braised pork shanks with rice or potatoes, and drizzle them with the sauce.
