Pork Chop Braised with Chunky Mashed Potatoes

Ingredients:

4 pork chops (or neck chops)
5-6 potatoes
2 cloves of finely chopped garlic
1 finely chopped onion
100 g white wine
Juice from 1 lemon
Vegetable broth cube dissolved in warm water
1 tsp mustard
Salt, pepper, thyme, oregano, a bit of flour
Olive oil

Directions

Take the pork chops, season them with salt and pepper, and lightly coat them with flour. In a pot, add a bit of olive oil and saute the chops on both sides for about 3-4 minutes. Remove them from the pan and saute the onion and garlic, deglaze with wine, add lemon juice, the chops, a bit of warm water with the vegetable broth, thyme, and oregano. Simmer for about an hour. Around the halfway mark, add the potatoes, cut into large chunks, to simmer together.

Once the chops are cooked, remove them from the pot along with the potatoes. Add mustard to the remaining sauce, mix well, increase the heat to thicken the sauce.

Mash the potatoes into chunky consistency with a bit of the wine sauce, use this as the base on the plate. Place the chop on top and pour the sauce over it. Sprinkle with freshly ground pepper and thyme.
