Pork with dried beans

Pork with dried beans is a tasty winter dish that offers an alternative way to enjoy our favorite bean stew, especially if we add some hot peppers and a glass of red wine. Here are the ingredients we will need:

  • 1 kg pork shoulder, cut into small cubes
  • 250g dried white beans
  • 250g black-eyed beans
  • 2 ripe tomatoes, passed through a food processor
  • 1/2 tsp tomato paste (optional)
  • 2 carrots, sliced
  • 3 stalks of celery, finely chopped
  • 2 hot peppers (optional)
  • 100g olive oil
  • 1 dry onion, finely chopped
  • salt, pepper, oregano, bay leaf

Directions

We need to soak the beans overnight to soften them. In a saucepan, we boil the beans and skim off any foam that forms. We then simmer them for 45-50 minutes, making sure not to overcook them as we will finish them off with the pork.

In another pot, we add the olive oil and lightly saute the onion. Then, we add the pork and brown it on all sides. Optionally, we can add the tomato paste at this stage and mix it with the pork. We then add the tomato, celery, and spices, and reduce the heat. We simmer the pork for about 45 minutes to 1 hour until it becomes tender.

Once the pork is tender, we add the beans and carrots to the pot and top up with some of the water that we boiled the beans in. We let everything simmer together for another 40 minutes until the beans are soft and the sauce has thickened.
