Ingredients:
4 large Arabic pitas
600g minced beef
1 large onion, finely chopped
1 leek, finely chopped
2 cloves of garlic, finely chopped
80g olive oil
50g white wine
? bunch of parsley, finely chopped
150g grated cheese (of your choice)
½ tsp cumin
½ tsp thyme
Salt and pepper
For the sauce:
300g yogurt 50g olive oil
1 large tomato, finely chopped
? bunch of dill
3-4 mint leaves
1 small dry onion, finely chopped
1 clove of garlic, finely chopped
Salt and pepper
Parchment paper for wrapping the pitas
In a pan, saute the leek and onion. Then add the garlic. Next, add the minced beef and saute it well. Deglaze with white wine, let the alcohol evaporate, add a little water, and the spices. Let it simmer until all the liquid is absorbed.
While the minced beef is simmering, prepare the sauce. In a bowl, mix the yogurt and olive oil together until the olive oil is fully incorporated. Then add the tomato, onion, garlic, dill, mint, salt, and pepper.
Once the liquid is absorbed from the minced beef, remove it from the heat and add the parsley and grated cheese. Mix everything well.
Take an Arabic pita, spread the sauce evenly over the surface, and then add the minced beef mixture. Fold the sides of the pita towards the center and tightly roll it up.
Place the roll with the closing side down on a grill pan and carefully turn it to cook the pita evenly.
Cut a piece of parchment paper, wrap the roll, and then use a knife to cut the pita roll in half.
Serve it with salad, fried potatoes, or even chips.
Enjoy your meal!
