Chicken roll with minced meat filling

A chicken roll that is perfect for a festive table and can be served to your guests. Although traditionally the main dish for big celebrations in Greece was lamb or pork roasted in the oven, the roll has become popular especially among housewives who had a million things to take care of on holidays. It was a special and tasty dish that could be prepared in advance the day before, and on the day of the celebration, they only had to bake it.

Ingredients:

  • 1 large chicken opened for a roll (ask your butcher to open it for you)
  • 2 sweet potatoes cut into pieces
  • 5-6 boiled chestnuts cut in half
  • 1 quince sliced
  • 3 dried figs finely chopped
  • 50g white wine
  • 400g chicken broth

For the filling:

  • 400g mixed minced meat (beef-pork)
  • 250g mushrooms finely chopped in a food processor
  • 50g white wine
  • 5 boiled chestnuts finely chopped
  • 2 tbsp raisins soaked in wine
  • 2 cloves garlic finely chopped
  • 1 onion finely chopped
  • 1 leek finely chopped
  • 1 packet of pine nuts
  • 1 pomegranate cleaned
  • olive oil
  • salt and pepper

For the sauce:

  • 2 tbsp corn flour
  • salt and pepper

Directions

  1. In a pan, heat some olive oil and saute the onion and leek. Then add the garlic, mushrooms, and saute lightly. Next, add the minced meat and stir with a wooden spoon for 7 minutes until the meat changes color.
  2. Deglaze with white wine and add all the remaining ingredients except for the pomegranate. Let it simmer until the liquids are absorbed. Then remove from heat and add the pomegranate, stirring it in.
  3. Take the chicken and pat it dry with absorbent paper to remove all the moisture. Lay it skin side down and place a piece of plastic wrap on top. Use a meat mallet to pound and flatten the chicken as much as possible.
  4. Preheat the oven.
  5. Next, lay down a piece of parchment paper and transfer the chicken onto it with the skin side down. Salt and pepper the chicken, and then spread the filling evenly onto it. Roll the chicken tightly with the help of the parchment paper and tie it with kitchen twine.
  6. Place the chicken roll in a roasting pan and add the white wine and chicken broth. Cover the pan and cook for about an hour.
  7. After an hour, remove the cover and add the chestnuts, sweet potatoes, figs, and quince. Season with salt and pepper, add more liquids if necessary, and bake for another 30-45 minutes.
  8. When the chicken is cooked, remove the kitchen twine carefully and cut it into thin slices. Place it on a platter with the garnish and pour the sauce over it.
