Crepes Cannelloni with Minced Meat

A delicious and wonderful recipe that appeals to both children and adults alike. It requires a bit of work, but the taste and flavor will definitely reward you.

Ingredients:

  • 2 servings of crepe batter (tag)
  • 1 cup minced beef
  • 2 dried onions, finely chopped
  • 2-3 cloves of garlic, finely chopped
  • 2 ripe tomatoes, pureed
  • 200g grated Gouda cheese
  • ½ tsp ground cinnamon
  • ? tsp ground cloves
  • ½ tsp sugar
  • ½ tsp white wine
  • 1 bay leaf
  • Olive oil
  • Salt and pepper

For the sauce:

  • 1 dry onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 2-3 tbsp olive oil
  • 2 tbsp tomato paste
  • 2-3 basil leaves, finely chopped or 1 tsp pesto
  • 1 ripe tomato, diced
  • Salt, pepper, cinnamon, cloves (to taste)
  • A little water

Directions

Let's start with the crepes. Prepare the batter and cook the crepes. Once they are ready, place them on a plate and cover with plastic wrap to prevent them from drying out.

Next, take a saucepan and heat it up. Add the minced beef and saute it. Then add the onion, garlic, deglaze with white wine, and add the tomatoes and spices. Let the meat simmer until all the liquid has evaporated. When it's almost dry, remove it from the heat and sprinkle some grated Gouda cheese inside (reserve some for later).

In a small saucepan, start making the sauce. Saute the onion, then add the garlic, tomato paste, diced tomato, spices, basil, and a little water. Let it simmer for 10 minutes.

Once the meat has cooled down a bit, take a crepe and spoon some meat mixture in the middle. Fold the right side over, then fold the top and bottom to create a packet, and finally roll it to the left side until it's closed. Repeat the process until you've used all the meat mixture.

In a baking dish, pour some sauce on the bottom. Place the crepes in a row and pour sauce over them.

Bake in the oven at the lower rack for about 25-30 minutes, then move it to a higher rack to get some color and gratinate. 10 minutes before removing the dish from the oven, sprinkle the remaining Gouda cheese over the crepes.
