A classic family recipe from Greek cuisine. It reminds us of Sunday afternoons when we gather at our homes, with friends, the TV playing, and Mom busy in the kitchen, filling the house with delicious aromas coming from the oven. Most of the time, the preparation of the roll would be done the day before, so on Sunday, after returning from church, Mom would simply put it in the oven and prepare the garnish that usually the children wanted (oven-roasted potatoes or mashed potatoes), and slice some salad.

Our Ingredients:

4-5 boiled eggs for the filling

1 kilogram of minced beef

2 onions, minced or blended into a puree

2 cloves of garlic, pureed

100g breadcrumbs

1 teaspoon of thyme

2 tablespoons of tomato paste

2 eggs

200g mixed cheeses

½ cup of milk

Olive oil

Salt, pepper, ground spices

Directions

In a small frying pan, add some olive oil and saute the onion puree with garlic until the moisture evaporates and the onion turns golden brown (sweetens). Let it cool.

Next, in a bowl, combine the minced beef with all the ingredients (except the cheeses) and the sauteed onion puree. Knead well until the mixture no longer sticks to the bowl and changes color from the spices.

Spread a large sheet of parchment paper on a clean surface. Then, place the minced beef mixture on it and shape it into a rectangular shape.

Spread the mixed cheeses evenly over the entire surface of the minced beef, and in the middle, place the boiled eggs tightly, one behind the other.

With both hands, lift the edges of the parchment paper that are closest to you and gently roll the mixture. The roll should make one complete turn and cover the boiled eggs. Then, using your hands, press the parchment paper tightly along the length of the cylinder and lift it up again until the minced beef is completely sealed and a caramelized crust is formed. Tightly fold the edges and place the roll on a baking tray.

Bake for approximately 1 hour and 15 minutes in a preheated oven at 180 degrees Celsius.

While the roll is baking, prepare your choice of oven-roasted potatoes.

After the time has passed, remove the parchment paper and add your choice of potatoes to the side of the roll (lemon potatoes, paprika potatoes, or potatoes with rosemary and thyme). Continue baking for another 45 minutes until the potatoes are cooked and the roll has a golden color.

Once it's ready, let the roll cool for a while so that it can be sliced without falling apart.
