Stuffed Burgers with Cheese and Tomato

Our Ingredients:

  • 1 kg ground beef
  • 3 slices of crusty bread soaked in white wine
  • 2 eggs
  • 2 large onions, blended
  • 1/2 bunch finely chopped parsley
  • 1/4 bunch finely chopped mint
  • 1 tsp mustard
  • 1 tsp oregano
  • 250 g cheese, sliced (such as gouda, Edam, Kefalograviera, or smoked cheese)
  • 2 tomatoes, peeled and sliced
  • Salt and pepper

For the Potatoes:

  • 1 kg potatoes, cut into wedges
  • 3 tbsp mustard
  • 2 tbsp thyme
  • Juice of 2 juicy lemons
  • 2 tbsp butter
  • Olive oil
  • Salt, pepper, oregano, and thyme

Directions

In a small frying pan, saute the onions until they release their juices and become lightly golden. Once they have a light color and have turned into a puree, remove them from the heat. In a mixing bowl, combine all the ingredients, including the cooled sauteed onions. Mix the ground beef thoroughly and cover it with plastic wrap. Let it rest in the refrigerator for at least 2-3 hours (ideally, overnight) to allow the flavors to blend.

While waiting, prepare the potatoes. Place them in a baking dish with the remaining ingredients, ensuring they are well coated, and add 150 g of water.

Next, shape the ground beef mixture into round patties. Take one patty, place a slice of tomato and cheese on top, and cover it with another layer of ground beef to seal the filling. Place the stuffed burgers on top of the potatoes.

Cover the baking dish with moistened parchment paper and bake in a preheated oven at 180°C for approximately 40-45 minutes. Then, remove the parchment paper and continue baking for another 20 minutes or until the burgers have a golden color.
