Our ingredients:

500g chicken livers

½ wine glass of white wine

A pinch of oregano

2 garlic cloves

Juice of one juicy lemon

Salt and freshly ground pepper

A little olive oil for frying

A handful of parsley for garnish

Directions

We thoroughly wash the chicken livers. If your butcher has included all the innards, carefully remove the gall bladder (to avoid bitterness) and any blood from the hearts. Drain them well and pat dry with absorbent paper. Cut them if needed (if they are all together). In a pan, heat the olive oil and add the garlic. Let it infuse for a while until the oil becomes fragrant, then add the chicken livers and saute them well. Next, deglaze the pan with white wine and add a little warm water, just enough to partially cover the chicken livers. Allow them to simmer for 15-20 minutes until most of the water evaporates, leaving a flavorful sauce. Add the lemon juice and oregano (be careful not to add too much oregano, as it can become bitter), season with salt, and bring it to a gentle boil before removing from heat. Sprinkle with freshly ground pepper and finely chopped parsley as a finishing touch.
