Ingredients:

  • 500g fresh cleaned broad beans (or soak dried beans from the previous day)
  • 1 village-style sausage, sliced into thick rounds
  • 1 onion, sliced
  • 2 cloves of garlic
  • 3 ripe tomatoes or 1 can of crushed tomatoes
  • 1 bunch of fresh green onions
  • 3-4 blossoming onions with their bulbs (optional)
  • 1 bunch of finely chopped dill
  • 1 carrot, sliced
  • Olive oil
  • Salt and pepper

Directions

After removing the black eye from the broad beans, take a large pot and add a little olive oil. Saute the loukaniko sausage. Then remove and set aside on a clean plate. In the same oil, add the sliced onions and fava beans (optional), followed by the broad beans and carrots. Add the tomatoes and enough liquid to cover the ingredients. Season with salt and pepper, reduce the heat, and let it simmer for 30-35 minutes. Then add the dill and let it simmer for another 10 minutes or so.

Serve with a drizzle of olive oil and freshly ground pepper.

Note:

  • The blossoming onions are the fresh onions that have developed a bulb on top. They produce a sweet and flavorful juice. If added to the dish, it sweetens and enhances the flavor.
  • Another tasty variation is to cook Koukia me Loukaniko in a casserole dish. After sauteing the ingredients, transfer them to a preheated oven and cook for about 10-15 minutes, adding dill and your choice of cheese (such as feta or spicy cheese). Allow the cheese to brown on top.
  • For an extra twist, you can also add bell peppers.
  • Try replacing the loukaniko with pork meat.
