Exquisite, delicate eggplant fritters with a rich flavor for a distinctive meal!
Ingredients:
• 4-5 flask-shaped eggplants
• 2 slices of whole-grain bread
• 2 cloves of minced garlic
• ½ bunch of finely chopped parsley
• ½ bunch of finely chopped dill
• 1 dry onion, finely chopped
• 1-2 fresh spring onions, finely chopped
• 50g coarsely chopped walnuts
• 100g feta cheese
• Salt and pepper to taste
• 1 tsp baking powder
• Olive oil for frying
1. Pierce the eggplants with a fork and place them in the oven at a high temperature to bake. Turn them to ensure they bake evenly.
2. Once they are ready, remove them from the oven, peel them carefully, and scoop out the insides. Finely chop it and place it in a sieve to drain excess liquids.
3. In a bowl, take the bread (after soaking and draining it well) and add all the ingredients, including the finely chopped eggplant. Mix well.
4. Place the mixture in the refrigerator to firm up.
5. Shape the mixture into small patties, coat them in flour, shake off the excess flour, and fry them in batches in hot oil to maintain the oil temperature.
6. Serve hot.
