Zucchini Patties - Fasting-Friendly

Delicious, quick, and easy aromatic zucchini patties to accompany your fasting meals on the table.
Our ingredients:
500g zucchini
1/2 bunch of dill, finely chopped
1/2 bunch of parsley, finely chopped
1/3 bunch of mint, finely chopped
4-5 fresh spring onions, finely chopped
1 large dry onion, finely chopped
1/2 tsp baking powder
200g breadcrumbs
Salt, pepper
Olive oil
Flour

 

Tomato Dip
3 ripe tomatoes
1/2 onion, finely chopped
1 clove of garlic, mashed
A little parsley, finely chopped
A little mint, finely chopped
Salt, pepper
2 tbsp olive oil

Directions

Grate the zucchini using a grater. Place them in a sieve, sprinkle with salt to remove their moisture, and let them sit for 15 minutes. Squeeze the zucchini well and transfer them to a bowl along with the rest of the ingredients. The mixture should be relatively firm. Form small balls and lightly flatten them. Coat them with flour, shaking off any excess. Fry them in hot oil for 3 minutes on each side. Place them on absorbent paper to remove excess oil and make them crispier. Alternatively, you can bake them in the oven for a lighter result. Serve them warm with tomato dip

To make this refreshing tomato dip, we first need to prepare the tomatoes. Make a small cross-shaped incision at the bottom of each tomato and dip them in boiling water for half a minute. Then transfer them to cold water with ice cubes to halt the cooking process, and peel off the skin. Cut them in half and remove the seeds. Pass them through a grinder, and then add the rest of the ingredients. It is very refreshing and can accompany meatballs, batons, vegetables, nachos, and many more.
