Fasting Tomato Meatballs
Delicious and flavorful summer tomato meatballs that are juicy and aromatic. They are perfect as an appetizer, suitable for vegetarians, and great for buffets, your dining table, and even as finger food for both kids and adults, perfect with a cold beer or any other cravings you have.


Ingredients:
• 5 ripe tomatoes, finely chopped
• 1 dry onion, grated
• 2-3 fresh onions, finely chopped
• A little mint, finely chopped
• A little dill, finely chopped
• A little parsley, finely chopped
• Approximately 200g breadcrumbs
• Salt and pepper
• A little flour
• 1 tsp baking powder

Directions

Let's start by preparing the tomatoes. Make a small cross-shaped incision at the bottom of each tomato and immerse them in boiling water for half a minute. Then transfer them to a bowl of cold water with ice cubes to stop the cooking process and peel off the skin. Cut the tomatoes in half and squeeze out the seeds. Finely chop the tomatoes and add them to a bowl along with the remaining ingredients. Mix well until you get a thick paste. Be careful not to overmix; we just want to combine the ingredients.
Using a spoon, take a small amount of the mixture and place it in a frying pan. If you find it difficult to shape the mixture into meatballs, you can make the mixture a bit tighter and shape it into balls. Fry the meatballs in moderate heat using a sufficient amount of oil. Avoid constantly flipping the meatballs as they will absorb more oil. Once cooked, drain them on absorbent paper towels.
Serve the meatballs warm.
