Ingredients:
• 4-5 large eggplants
• 3 slices of white bread (soaked in water and squeezed)
• 2 cloves of garlic (minced)
• 2 eggs
• 200g spicy Kefalograviera cheese or feta cheese (crumbled)
• 1/2 bunch of parsley (finely chopped)
• 1/2 bunch of dill (finely chopped)
• 1 onion (finely chopped)
• 1-2 spring onions (finely chopped)
• 50g coarsely chopped walnuts
• 100g breadcrumbs
• Salt and pepper to taste
• 1 tsp baking powder
• Olive oil for frying
1. Pierce the eggplants with a fork and place them in the oven at a high temperature to roast. Turn them around to roast on all sides.
2. Once they are cooked, remove them from the oven, peel them carefully, and take out the flesh. Finely chop the flesh and place it in a strainer to drain excess liquid.
3. In a bowl, combine the soaked bread (squeezed well) with all the other ingredients, including the chopped eggplant flesh. Mix well.
4. Place the mixture in the refrigerator to firm up.
5. Shape the mixture into patties, coat them with flour, shake off any excess flour, and fry them in batches in hot oil to maintain the temperature.
6. Serve the melitzanokeftedes warm.
