Mixed Pickles

A delightful snack for beer and wine enthusiasts, and more. Traditionally served as the first appetizer on Clean Monday, this mixed pickle is perfect for those who enjoy something spicy!! It is our famous and much-loved pickle.


Ingredients:

• 4 cleaned and sliced carrots or passed through a mandolin
• 1 sliced beetroot (about half a centimeter thick)
• 3-4 celery stalks, cut into approximately 1-centimeter pieces
• Florets from ½ cauliflower
• Florets from half a broccoli
• Coarsely chopped cabbage pieces (about half a cabbage)
• 5-6 small cucumbers
• 5-6 sliced horn peppers
• 1 bell pepper, sliced
• 5-6 small chili peppers
• 2-3 bay leaves
• 1 tsp peppercorns
• 3 tsp capers
• 2-3 cloves of garlic, sliced
• 1 lemon, sliced
• Vinegar (to taste, as much as you like)
• 2 tsp coarse salt
• 1 tsp citric acid (acts as a preservative along with salt and vinegar, also keeps the vegetables color intact)

Directions

1. Boil water in a pot. Add salt (one full tablespoon per liter of water), bay leaves, peppercorns, capers, and a teaspoon of citric acid.
2. Stir and add the vegetables to the pot, placing the harder vegetables (cauliflower, beetroot, etc.) at the bottom and the softer ones (sliced bell peppers, cucumbers, etc.) on top.
3. Let it simmer for about 10 minutes. Remove the pot from the heat and take out the jars.
4. Using a slotted spoon, fill the jars with vegetables after placing a lemon slice at the bottom of each jar. Then, with a ladle, fill the jars almost to the top with the boiled water containing salt, citric acid, and spices.
5. If the jar is metallic, place a plastic food wrap under the lid to protect the metal from rust (because vinegar, citric acid, and salt will corrode the metal).
6. Leave it in the refrigerator for about a week, and then it's ready to eat (though it's delicious even after 3-4 days).
7. Another tip for more flavor is to use different types of vinegar available in the market (with BBQ flavor or citrus, etc.). You can place a tablespoon of your preferred vinegar flavor under the lemon slice for a unique taste!
