Ingredients:
• 150g Soujouki politiko, sliced (without the membrane)
• 3 eggs
• 100g grated smoked cheese
• 50g grated gouda cheese
• 40-50g tomato sauce
• 1 pinch of cumin
• 1 pinch of paprika
• Olive oil
1. In a pan, fry the soujouki slices with a little olive oil for 1-2 minutes on each side.
2. Preheat the oven to 180°C (350°F).
3. In a fireproof dish, put the soujouki, 2 tablespoons of tomato sauce, and put the eggs over it. Sprinkle with cumin and bake for 3-4 minutes.
4. Remove from the oven and sprinkle with gouda cheese and then smoked cheese. Return the dish to the oven for a few more minutes until the cheese melts.
5. Sprinkle with paprika and serve hot.
