Stuffed Rolls with Peppers and Sausage

These rolls are a true taste sensation, with the combination of various peppers and sausage creating an amazing result. Ingredients:
• 2 red bell peppers
• 2 yellow bell peppers
• 2 green bell peppers
• 3 rustic sausages (approximately 700g)
• 250g mixed cheeses
• 3 ripe tomatoes, finely chopped
• 1 onion, finely chopped
• 2 cloves of garlic, finely chopped
• ? bunch of parsley, finely chopped
• Salt, pepper, and oregano to taste
• Olive oil

Directions

Thoroughly wash the peppers and cut them vertically in half. Remove the seeds and membranes, lightly brush them with olive oil, and season with salt and pepper. Place them in the oven and bake until slightly softened. In the same baking dish, place the sausages and cook them until they are lightly browned.
While the peppers are baking, prepare the rest of the ingredients. In a saucepan, saute the onion until translucent, then add the garlic and continue cooking. Add the chopped tomatoes, season with salt, pepper, and oregano, and let simmer on low heat until the excess liquid evaporates. Just before removing from heat, sprinkle with chopped parsley.
Take out the peppers and sausages from the oven. Cut the sausages into bite-sized pieces. Take one pepper, place grated cheese on top, and then add a piece of sausage. Roll up the pepper, securing it with a toothpick.
Repeat the process until all the ingredients are used. In a baking dish, spread a layer of sauce on the bottom, covering it completely. Arrange the stuffed peppers and pour the remaining sauce over them. Finally, sprinkle grated cheese on top.
Bake in a preheated oven at 180°C (350°F) for 30 minutes, or until the cheese turns golden brown.
