Tomato Meatballs

Tomato meatballs are a delicious and unique variation of traditional meatballs. This recipe combines the wonderful flavor of ripe tomatoes with aromatic herbs and cheese, creating a dish that is full of flavor and texture. It is perfect for a meal or as an appetizer that will impress your guests.
Ingredients:
• 5 ripe tomatoes, finely chopped
• 1 dry onion, grated
• 2-3 fresh onions, finely chopped
• 150g spicy feta cheese or hard feta cheese, grated
• ½ bunch of mint, finely chopped
• A little dill, finely chopped
• A little parsley, finely chopped
• Approximately 200g breadcrumbs
• Salt, pepper, and oregano
• A little flour
• 1 tsp baking powder

Let's start by preparing the tomatoes. Make a small cross-shaped incision at the bottom of each tomato and immerse them in boiling water for half a minute. Then transfer them to a bowl of cold water with ice cubes to stop the cooking process and peel off the skin. Cut the tomatoes in half and squeeze out the seeds. Finely chop the tomatoes and add them to a bowl along with the remaining ingredients. Mix well until you get a thick paste. Be careful not to overmix, as we want to avoid a meatball-like texture.
Using a spoon, take a small amount of the mixture and place it in a frying pan. If you find it difficult to shape the mixture into meatballs, you can make the mixture a bit tighter and shape it into balls. Fry the meatballs in moderate heat using a sufficient amount of oil. Avoid constantly flipping the meatballs as they will absorb more oil. Once cooked, drain them on absorbent paper towels.
Serve the tomato meatballs warm. You can accompany them with a yogurt dip flavored with mint and dill.
