Our ingredients:
• 100g green fava beans
• 100g orange fava beans
• 100g yellow fava beans
• 3 small onions, roughly chopped
• 1 large carrot
• ½ cup olive oil
• Salt and white pepper
For serving:
• Finely chopped dry onion
• Capers
• Finely chopped sundried tomato
• Lemon
• Olive oil
In three separate saucepans, saute the roughly chopped onions and grated carrot without allowing them to brown. Add the respective fava beans to each saucepan along with 350g of hot water. Let them simmer until they have absorbed most of the water (the green fava beans might require a bit more water).
Carefully foam the beans and be cautious not to stir them too much, as they can stick. Simply let them simmer gently. Once they have absorbed most of the liquid, season them with salt and white pepper, and remove them from the heat. Use an immersion blender to puree the beans individually.
Combine the three types of fava beans together and mix well to homogenize the flavors.
Serve the dish with finely chopped dry onion, capers, sundried tomato, a drizzle of olive oil, and a squeeze of lemon.
