Ingredients:
• 500g fava beans
• 2 large onions, roughly chopped
• 1 ½ liters water
• ½ cup olive oil
• Salt and white pepper to taste
For serving:
• 1 dry onion, finely chopped, with a drizzle of olive oil, lemon, capers, and olives
• Or caramelized onions
• Or pesto with walnuts
• Or, of course, fig syrup that enhances its flavor and aroma

Directions

In a pot, heat some olive oil and saute the roughly chopped onions until they become golden (but not dark). Add the fava beans and water, and stir until it comes to a boil. Once it boils, reduce the heat and let it simmer for about 45-50 minutes. Keep an eye on the fava beans and skim off any foam that forms.
When the fava beans have absorbed most of the water and have almost melted on their own, season with salt and white pepper. Remove from heat and blend the mixture with an immersion blender until smooth.
Serve according to your preference and taste. You can accompany it with a variety of toppings, such as chopped onions with olive oil, lemon, capers, and olives, caramelized onions, pesto with walnuts, or even fig syrup for added sweetness.
