Our ingredients:
• 250g chickpeas
• 1 large dried onion
• 3-4 fresh spring onions
• ½ bunch finely chopped dill
• ½ bunch finely chopped parsley
• ½ bunch finely chopped mint
• 1 clove minced garlic
• 80g coarsely chopped walnuts
• 1 tsp baking powder
• Flour
• Salt and pepper
• Olive oil for frying

Directions

One day before, we soak the chickpeas in water to swell. The next day, we drain and spread them on a towel to dry. We gradually puree them in a blender. We add the remaining ingredients and mix well. We let the mixture rest in the refrigerator for one to two hours to firm up and blend the flavors. We shape small balls and lightly press them from the top. We coat them with flour and shake off the excess. We fry them over medium heat until they turn golden. Then, we place them on absorbent paper.
Optional variations:
• Add fresh finely chopped coriander, a dash of cumin, a hint of ginger or hot pepper to give an Arabic twist (Falafel).
• If you're not fasting, you can add grated graviera cheese to the mixture and serve it with yogurt dip to elevate the flavor.
