Our Ingredients
For the Tangzhong
• 20g bread flour
• 50g water
• 60g milk
In a small saucepan, mix our ingredients until it thickens.
• 120g milk
• 9g dried yeast
• 35g sugar
Mix the yeast and sugar in lukewarm milk and let it sit for 10 minutes.
• 320g bread flour
• 7g salt
• 1 egg
• 1 egg yolk
• 42g butter
After the yeast has frothed, add the flour, salt, egg, and egg yolk. Mix well and add the butter in 3 portions, just like adding the tangzhong.
When the dough becomes soft, lightly oil a large bowl and place the dough inside. Cover it and leave it in a warm place for 1-1½ hours.
Next, punch down the dough, divide it equally, and shape it. Let it rise for another hour.
Bake in a preheated oven at 180°C (356°F) for 20-25 minutes.
When you take them out of the oven, let them cool for 15 minutes.
