A traditional bread enriched with feta cheese, grated finely. In the old days, housewives used to bake bread once a week, and they would set aside a portion of dough into which they added grated cheese, which they made themselves from their own animals. They would offer this to their husbands when they left for the fields. Often, they would also add herbs like thyme, oregano, etc. Nowadays, you can find it in bakeries all over Greece, as it has become a beloved snack for all hours, whether at home, in the office, at school, or even in the car.
Ingredients:
• 350g hard feta cheese, finely grated
• 600g bread flour
• 410g lukewarm water
• 1 tsp salt
• ½ tsp sugar
• 1 packet of yeast
• 2 tsp oregano
• 2 tsp sesame seeds
• 2 tbsp melted butter for brushing
1. In a small bowl, combine a small amount of lukewarm water with yeast and sugar. In another bowl, mix the flour with salt and oregano.
2. Once the yeast becomes active, incorporate it into the flour mixture along with the remaining water. Knead the dough until it becomes smooth and elastic.
3. Let the dough rest until it doubles in size.
4. Incorporate the finely grated feta cheese into the dough and knead it well to ensure the cheese is evenly distributed.
5. Place the dough in a baking dish and shape it into a round loaf using your palms.
6. Finally, after melting the butter in a small bowl, dip your fingers in it and create a pattern on the dough. Make crisscrosses a couple of inches apart from where the dough ends. Create little bunches around the circular edge you formed at the beginning. Let it rest and rise.
7. Preheat your oven to 180°C (356°F) on the fan setting. Just before placing it in the oven, brush the bread with the remaining melted butter and sprinkle sesame seeds on top.
8. Bake until it acquires a golden color, then remove it.
• During shaping, you may need to use a little extra flour if necessary.
