Cretan Olive Oil Cookies

Fasting, crispy, traditional cookies made with olive oil. The famous Cretan olive oil, which is the foundation of every household's diet, and of course, in Crete, olive oil is used in most cookie recipes.

Our ingredients:

350g olive oil

250g sugar

250g water, boiled with cinnamon and cloves

50g raki (a Greek spirit)

1 tsp baking powder

? tsp ammonium carbonate

1 cup all-purpose flour

Sesame seeds

Place a cinnamon stick and

10 cloves in a pot to boil.

Directions

In a bowl, mix the sugar and olive oil well for 5 minutes. Then add the remaining ingredients (flour, ammonium carbonate, baking powder, raki, and water) and mix well. You will have a pliable dough. Shape the dough into small cookies, and before placing them on the baking sheet, take a bowl of water and pour sesame seeds onto a plate. Take each cookie and quickly dip it in the water, then place it in the sesame seeds. Put the cookies on the baking sheet lined with parchment paper.

Bake at 180°C (350°F) for 20-30 minutes, depending on the size of the cookies.
