Lazarakia

When I was little, my grandmother Stergoula used to make us Lazarakia every year. I remember it like a dream... she would give them to us in our hands, and as we chewed, we played in the yard. My grandmother, you see, came from Kalymnos. In Kalymnos, as far as I remember my grandmother telling me, children sing the Lazarus carols as they go around the neighborhoods, and the housewives give kisses and tips. Back then, on the island's lordship, my grandmother, who worked as a cook, used to make little rolls, or eggs, and generally ingredients they had at home for preparing for Holy Week.
So, Lazarakia are stuffed. Everyone puts in whatever they have. A few walnuts, a few almonds, a few raisins... and more. That's why, because the filling is sweet, our dough is balanced to be sweet... just right. Personally, I really like to put in pieces of spoon sweets (orange, fig, etc.) or even jams. The shape of Lazarakia is characteristic, as we put the scarf Lazarus had on his head and crossed arms. For eyes, 2 cloves. This dough of ours, being fasting, is quite easy and you can use it generally to make stuffed with healthy products and give them to the children.

Our Ingredients
150g vegetable oil
240g sugar
360g warm water
900g soft flour (may need a little more)
A pinch of salt
15g dry yeast
1 tsp powdered mastic gum from Chios
? tsp cinnamon powder
For the filling
Walnuts, almonds, raisins, cognac, a little cinnamon, a little ground cloves.

Directions

In a bowl, mix the warm water with the yeast to activate it. Then in a basin, mix the sugar, cinnamon, salt with the flour. When the yeast is activated, pour it into the flour along with the vegetable oil and mix to form an elastic dough. Leave the dough in a covered basin to rest in a warm environment for about half to three-quarters of an hour.
Then take a dough ball about the size of a small fist. Open the ball like a pita. Place the filling inside. Close the dough tightly like a small pie. Give it a shape.
Take a small piece of dough, make it like a macaroni and then flatten it with your fingers to make it wide. Place it on the head of Lazarus.
Next, make a quite long macaroni and in the middle flatten it to make it flat. Place it on the flat spot on your Lazarakia and cross the arms. Place 2 cloves for the eyes.
Bake for 20-30 minutes (depending on how big you make them) at 180°C in a fan oven.

You can put pieces of spoon sweets inside.
If you want, you can experiment by putting pieces of chocolate or pasteli inside.
Make them with your children, all together, and create sweet memories...
You can replace part of the water with orange juice (e.g. 100g).
If you like tahini, you can mix the nuts with tahini instead of cognac.
