My favorite pie!!! Those who know me better surely know that this is my pie!!! And my mother-in-law knew it very well too! I've had the best leek pie from my mother-in-law... And she always made a whole tray just for me!
It's wonderful, full of flavor, aromatic, light, with lots of flavors!!!
Luckily, it's easy to make, and I can make it often! So,
let's see the ingredients:
1 kilogram of leeks, thinly sliced
2 well-beaten eggs Approximately
200g of feta cheese
Salt, pepper,
olive oil,
sesame seeds (optional)
For the pastry:
Flour, oil, water, salt (see pastry recipe) or one package of ready-made phyllo dough
In a non-stick pan, pour the oil and heat it up. When it's ready, add the leeks and stir continuously until they wilt. Once the leeks are ready, remove them from the heat and let them cool. Then, add the beaten eggs (keeping a small amount for brushing the top layer) and the crumbled feta cheese.
In a baking dish, layer the pastry sheets evenly, dividing them equally. In other words, use the same number of sheets on the bottom as on the top, and brush some olive oil with butter in between the sheets to make the pastry softer.
On the top layer, brush with the remaining beaten egg and sprinkle some sesame seeds.
Bake in a preheated oven at 180 degrees Celsius for about an hour.
