Ingredients:
1. For activating the yeast:
? 250g lukewarm water
? 20g dry yeast
? 80g tsoureki flour (in a yellow package)
? 1 tbsp sugar
2. Ingredients for our tsoureki:
? 1500g tsoureki flour (in a yellow package)
? 400g sugar
? 500g orange juice
? 250g vegetable oil
? 4g mahleb
? 4g ground cardamom
? A pinch of salt
? Powdered sugar for glazing: 2 tbsp powdered sugar, 4 tbsp water
1. Start with the yeast activation: In a bowl, mix the ingredients from the first stage. Cover the bowl and leave it in a warm place. While waiting, proceed to the second stage.
2. Prepare the tsoureki mixture: In a small saucepan, combine orange juice, sugar, vegetable oil, mahleb, ground cardamom, and a pinch of salt. Stir over very low heat until the sugar melts. Caution: Do not let the mixture boil. Once the sugar is melted, remove the saucepan from the heat and pour the mixture into a deep bowl.
3. Add yeast and flour: Add the activated yeast (which should have risen) to the bowl. Gradually add the tsoureki flour. Once an elastic dough forms that doesn't stick to your hands, cover it and let it rise in a warm place.
4. Shape and second rise: After the dough has doubled in size, take two baking trays, apply some oil, and shape braids with the dough. Place them on the trays and let them rise again in a covered place.
5. Glazing and final touches: Once the braids are ready and puffed up, glaze them with the powdered sugar mixture. Sprinkle them with sliced almonds and filo almond. Place them in the oven at 170°C for about 20 minutes (adjust based on the size of your braids).
