  • 2 large onions, finely chopped
  • 300g mixed cheeses or your preferred grated cheese
  • 3 cloves of garlic, finely chopped
  • 1 packet of pie crust dough or ready-made phyllo dough
  • 1 wine glass of white wine
  • 2 grated carrots
  • 1 tsp tomato paste
  • ? tsp cinnamon
  • ? tsp allspice
  • ? tsp nutmeg
  • Chicken broth
  • ? tsp paprika
  • Salt and pepper
  • Olive oil for sauteing
  • Vegetable oil for brushing the dough
  • 1 egg
  • A sprinkle of sesame seeds

Directions

Preheat the oven. Take a wide saucepan and saute the minced meat. Once the meat is fully browned and all the moisture has evaporated, add the onions and tomato paste. Then add the garlic and carrots. Next, deglaze with wine, let the alcohol evaporate, add a little chicken broth, the spices, and let it simmer until most of the liquid is absorbed.

Next, prepare the dough for the pie crust. Once the meat mixture is ready, set it aside to cool down slightly. After a while, add the grated cheeses and mix well. Then add the egg and continue mixing with quick movements.

Distribute the dough evenly in a baking dish, brushing each layer with vegetable oil. Place the filling in the center. Score the top layer of dough after brushing it with oil and sprinkle with sesame seeds.

Bake for about 45 minutes at 180 degrees Celsius (350 degrees Fahrenheit) until the pie becomes crispy and golden brown.

Allow it to cool for 10 minutes before cutting.
