Muffins with Spinach, Feta, and Tomato

Delicious, fluffy little bites filled with spinach, feta cheese, and tomato. Tasty, healthy, and light, perfect for a snack, your child's school, or the office—anywhere with you! Fantastic for birthdays and parties, or as part of a buffet where they steal the show with their deliciousness!

Ingredients:

1 small container of full-fat yogurt (200g)

125g peeled and finely chopped tomato, seeds removed

150g self-rising flour

3 eggs

25g olive oil (or vegetable oil)

150g crumbled feta cheese

150g spinach leaves, cut into strips

Salt and pepper

Directions

The process is very easy: Mix all the ingredients in a bowl using a spoon. Pour the mixture into greased muffin molds and bake in a preheated oven at 180°C for 30-40 minutes. Test if they are done by inserting a toothpick.
