Mushroom Focaccia

Focaccia is a type of Italian bread or flatbread that could be considered a precursor to pizza. Essentially, it's a flatbread with various toppings. In the old days, when resources were scarce, homemakers would make focaccia with whatever ingredients they had in the fridge. You could find focaccia with vegetables, potatoes, onions, tomatoes, olives – in short, whatever was available. They often added herbs like rosemary, oregano, and thyme to enhance the flavor. Here, we will make a simple focaccia with our beloved mushrooms and peppers. It's delicious, filling, and can be prepared during fasting periods.


Ingredients:
For the dough:
• 440 grams of type 00 flour
• 1 packet of dry yeast
• 2 teaspoons of sugar
• 220 grams of lukewarm water
• 1 ½ teaspoons of salt


For the topping:
• 1/2 red bell pepper, cut into squares
• 1/2 green bell pepper, cut into squares
• 3 Portobello mushrooms, sliced

Directions

Let's start with our dough. In a small amount of lukewarm water, mix the yeast and sugar. Wait for it to activate. In a large bowl, combine the flour with the salt. Then, add the activated yeast mixture and water to the flour. Work the dough until it becomes smooth. Allow it to rest for 1-1.5 hours (depending on room temperature).
While the dough is resting, prepare your toppings by cutting the peppers and mushrooms.
Once the dough has rested, open it on a baking tray with a diameter of about 30 cm (12 inches) and add the mushrooms and peppers on top.
Bake in a preheated oven at 180°C (350°F) for approximately 50-60 minutes until it turns golden brown.
