The Strifti Hortopita (twisted herb pie) is a traditional and beloved recipe in Greek cuisine. It is usually made with various greens and feta cheese, but can also include herbs and spices such as dill and fresh onions.

After thoroughly washing our greens, we let them drain well and cut them into large pieces. We place them in a bowl with salt and let them sit for an hour to release their moisture. While waiting, we prepare the dough by dividing it into 3 or more equal balls and covering them to prevent them from drying out.
Once the greens are drained, we squeeze out as much moisture as possible and place them in a bowl with the eggs, feta cheese, and seasoning. We line a baking dish with parchment paper.
We roll out the dough very thinly with a rolling pin. We place the filling in a circular shape around the center of the dough, making a cross in the middle, then fold the edges of the dough over the filling and brush with oil. We gently roll up the pie from all sides, starting at one end and continuing until we have a long, twisted roll. We place it in the baking dish and continue with the remaining dough.
When finished, we brush the pie with oil and bake in a preheated oven at 180°C for 60-80 minutes until golden brown.
