Spinach and feta cheese swirl

pie On a lazy afternoon, with a movie and some friends, there's nothing better than enjoying a delicious pie that fills the house with its amazing aroma. This spinach and feta cheese swirl pie has a crispy crust and a delicious filling.

Ingredients: For the dough:

  • 600g soft flour, plus some extra for rolling
  • ½ cup olive oil
  • 300ml water
  • 2 tsp vinegar
  • 2 tsp salt
  • Butter mixed with vegetable oil for rolling

Alternatively, 1 package of phyllo pastry sheets can be used.

For the filling:

  • 1 egg
  • 300g hard feta cheese
  • 750g spinach, roughly chopped
  • 3 spring onions, finely chopped
  • ½ bunch fresh dill, finely chopped
  • Salt and pepper

Directions

  1. In a pan, saute the onions and spring onions. Add the spinach and saute until all the liquid has evaporated. Remove from heat and let cool.
  2. Once cooled, add the crumbled feta cheese, egg, dill, salt and pepper. Mix well and set aside.
  3. In a bowl, mix the flour, salt, olive oil, vinegar and water until a smooth and elastic dough is formed. Let rest for a while.
  4. Divide the dough into 4 or more equal parts. Keep two of them covered with a damp towel to prevent them from drying out.
  5. Roll out one piece of dough as thin as possible with a rolling pin, brushing it with the butter and oil mixture.
  6. In the center of the dough, place a portion of the filling, forming a circular shape.
  7. Fold the dough in half, making a cross in the center, and then fold the corners towards the center to create a swirl.
  8. Roll up the dough into a snail shape and place it on a baking tray.
  9. Repeat the process with the remaining dough and filling.
  10. Brush the pies with olive oil and bake in a preheated oven at 180°C for 55-60 minutes, until golden brown.
  11. Let the pies cool for a few minutes before serving.

Note: Additional ingredients such as pine nuts or raisins can be added to the filling to suit your taste.
