Ingredients:
• 1 kg wheat flour
• 1 packet of yeast
• 700 g lukewarm water
• 400 g feta cheese
• 200 g myzithra cheese
• 1 egg
• 3 tbsp olive oil
• ½ tsp pepper
• ½ tsp salt
• ½ tsp sugar
In a bowl, combine flour, yeast, salt, and sugar. Slowly add lukewarm water (not exceeding 40°C to avoid damaging the yeast), olive oil, and knead the dough. Shape the dough into a ball, coat it with oil, cover the bowl with plastic wrap, and place it in a warm spot.
While waiting for the dough to rise (it should be pliable and elastic), grate the feta cheese into a bowl, add myzithra cheese, pepper, and the egg. Mix until homogeneous.
Once the dough is ready, divide it into two equal parts. Shape each part into a roll and cut them into equal portions. Open each piece into a round pita shape, place a spoonful of the filling in the middle, then fold the edges towards the center, creating a pouch-like shape. Seal the pouch and press it to enclose the filling and create a round pita.
Arrange the pitas on a baking tray lined with parchment paper. Bake in a convection oven at 180°C for about 20 minutes. For a glossy finish, you can brush them with a mixture of oil and water.
The appearance and flavor resemble pan-fried bread, except these are baked in the oven, making them lighter and with less oil. You can also add soft cheeses for a chewier sensation, or get creative with the filling by using vegetables, deli meats, spinach, or any ingredients you prefer.
